This table shows the differences between the breeds of the three main games:

Banana
Norns of

Moderate, most will naturally learn to do what is best for their own survival.

Although some will develop irrational "phobias" of things.
Easygoing, amorous, playful, too social.  Arguably the most realistic looking norns.

Also the smallest and most well proportioned.
Malay
Norns of
C2
Lowest of the three, learn slowly and are difficult to breed and keep alive. Despite this they have an expanded vocabulary. Uptight, independent, disobedient difficult. Massive ears, large hands and feet.
Can have vibrant pigmentation. Have bulbous joints and a cartoon-like appearance.
Bengal
Norns of
C3
High, are capable of some simple social interactions. Capable of distinguishing between other norns. Despite this they never seem to learn to stop falling off things. Very sociable, exploratory, inquisitive, hyperactive. Large, colourful and often patterned, but have a plastic-like appearance and splayed legs.
Males tend to have spiky hair, whereas females have curls.
